SALMON SLIDERS

makes 20

2 pounds skinless salmon fillets

6 ounces thinly sliced smoked salmon, finely chopped

3 tablespoons chopped fresh dill

1 tablespoon extra-virgin olive oil

20 mini hamburger buns or brioche buns

Whole-grain mustard and watercress sprigs, for serving

1. Cut salmon fillets into large chunks. Pulse in a food processor until chopped but not smooth. Transfer to a bowl and mix in smoked salmon and dill. Form into 20 patties (each 1 inch thick and 2½ inches in diameter).

2. Heat oil in a large skillet over medium-high. Cook patties, flipping once, until golden brown and almost cooked through, about 2 minutes per side.

3. Toast buns. Sandwich each with burger, mustard, and watercress.
